This delicious Tuscan spread uses artichoke, one of the best loved spring vegetables of Italy. It's made with finely grated raw artichoke hearts, extra virgin olive oil, lemon juice, salt and a little chilli. Enjoy as a dip, with bruschette, or served on pasta.
